Noon Whistle Brewing
Noon Whistle Brewing opened its doors in December 2014 in a modest industrial stretch of Lombard, Illinois, tucked behind a strip-mall parking lot on East Roosevelt Road. The founding team’s original vision wasn’t hop-forward extremity — it was sessionability, the idea that a well-made beer should be low enough in alcohol to enjoy in good company without derailing the rest of the day. That founding beer, aptly named First Born, kicked off a decade of experimentation that would eventually turn Noon Whistle into one of the more inventive names in Chicagoland craft beer, with a second taproom now open in nearby Naperville.
What began as a session-beer specialist evolved, quarter by quarter, into a brewery known for pushing the edges of style, especially with hops. Since 2017, its rotating Gummy series of hazy IPAs has built a cult following among Chicagoland’s self-described “juice fiends,” while barrel-aged sours and wild ferments round out a lineup that rarely sits still. It’s a brewery that treats reinvention as a house specialty rather than a gimmick.

Inside, the transformation from strip-mall exterior to industrial-chic taproom tends to catch first-time visitors off guard. Exposed brewing tanks sit visible behind the bar, a barrel room anchors one side of the building, and a beer garden extends the space outdoors for warmer months. The vibe leans casual and communal: pinball machines line a wall, trivia nights draw regulars on weeknights, and the scratch-made pizza kitchen — turning out Chicago thin-crust pies alongside wings and shareable bites — keeps tables full well past last call on the taps. It reads less like a production brewery with a tasting room bolted on and more like a neighborhood pub that happens to brew exceptional beer.
